Add some love to your pancakes…

I was reading onelittleproject.com when I ran into her adorable idea of adding a heart to her little girls toast! I instantly wanted to try this on something to see how Lyla would like it. She’s such a picky eater and I figured adding playful shapes with food coloring to her meals might be a good way to get her to expand her taste and… it’s fun to look at! This is the first food item I decided to try it out on and Lyla was amazed that her pancakes had a heart on them! She gobbled them down like nobody’s business. SoOo needless to say, I would chalk this one up to success! ;-) Check it out..

How To:

  • First, make your pancakes as you normally would. {We just made the box kind… quick and easy.}

  • Using a cookie cutter, push gently onto your pancake to leave an imprint but not to push it all the way through.

  • Then mix together approximately 2 tablespoons of milk with 3-4 drops of red food coloring.

  • Apply food coloring mixture to your pancakes using a basting brush and voila!

This would be a great breakfast in bed idea for your loved one for Valentines Day, anniversary or really any occasion! I seriously want to “paint” every meal up now with food coloring. SO STINKIN’ FUN <3

Oatmeal in a Mug

Have you tried making a cookie in a mug yet? This is a very similar idea… Within minutes you have delish oatmeal with a bread pudding texture. Yumminess. Hubs and I experimented with this idea last night and made a couple different versions of it until we found just the right amount of each ingredient. It’s super simple, try it out!

Ingredients:

  • 1/2 cup of oats
  • 1/4 cup of milk
  • 2 eggs
  • 2 tablespoons flour
  • Handful of blueberries {or berries of choice}
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon

Recipe:

  1. In a mixing bowl, mix together ALL ingredients well.
  2. Transfer mixture to a mug and microwave for 2 1/2 – 3 minutes.

That’s it! I’m not claiming this to be the healthiest breakfast I’ve ever had but it sure was tasty! It tasted fabulous with bananas too.

Momma’s NO BAKE Cookies

Today is one of those chilly Spring Indiana days and what’s better than to cozy up and munch on some delish cookies, right?! During this pregnancy I have been craving ONLY salad and chips & salsa but I was randomly in the mood for sweets today! As many of you know, when you get those prego cravings they’re hard to fight off sooo I definitely caved. I decided to pull out an ‘oldy but goody’ recipe that my mom always made growing up, “No Bake Cookies”. These cookies are simply to die for! {Maybe slightly dramatic BUT they are down right good!} Oh and my favorite part? NO BAKING! Check out how simple yet fantastic this recipe is…

Ingredients:

  • 1/2 cup of butter
  • 2 cups sugar
  • 1/2 cup milk
  • 1/4 cup cocoa
  • 1/2 cup peanut butter
  • 3 cups quick cooking oats
  • 2 tsp vanilla

Recipe:

  • Mix together the first 4 ingredients in a saucepan and bring to a rolling boil {Allow to boil for 2 minutes}
  • Add in the next 3 ingredients and stir
  • Drop small scoops of cookie mixture onto wax paper
  • Allow to cool until cookies are formed/set

I have to admit I practically devoured these cookies today. I did leave a few for the hubs though so I wouldn’t feel too guilty. ;-)

SUGAR COOKIES

Lately I have been cooking and baking A LOT more than normal. I’m talking like every night there has been a meal on the table by the time hubs gets home. For some of you supermoms out there, this is your normal. For me… eh, not so much. I decided to go all “Leave it to Beaver” on my family and make sugar cookies to top it off! I think it’s the prego side coming out but either way, I’m going to ride this wave for as longgg as I can. I’ll warn you, these are pure deliciousness with not an ounce of healthy in them so, get ready! ;-)

Ingredients:

  • 1 C Butter
  • 3/4 C Vegetable Oil
  • 1 1/4 C Sugar
  • 3/4 C Powdered Sugar
  • 2 T Water
  • 2 Eggs
  • 1/2 t Baking Soda
  • 1/2 t Cream of Tarter
  • 1 t Salt
  • 5 1/2 C Flour

Orange Julius {with Banana}

I’m dying, dying, DYING for Spring and Summer so much that I decided to make something cold and tasty today {although it’s like 30 degrees outside}. I found this de-freakin-licous recipe at sixsistersstuff.com and had to try it out ASAP. It’s super easy to make and takes only minutes! This Orange Julius recipe will be overused this Spring/Summer in my household because I’m THAT big of a fan! Okay, enough chatter. Here’s the recipe…

Ingredients:

  • 1 Can of Frozen Orange Juice Concentrate 
  • 1 Cup Skim Milk
  • 1/4 cup sugar 
  • 1 tsp of vanilla
  • 1 ripe banana
  • 1 to 2 cups of ice

How-To:

  • Combine all ingredients and mix together in a blender until ice is completely crushed. 
  • Drink up!

This recipe made exactly four whole cups and we actually put these in the freezer and they were fantastic! Is your mouth watering yet?! ;-)

Nutella Hot Chocolate

Happy Friday!

It’s been a wonderful week! I was so happy I to see one of my old high school besties yesterday and her beautiful 2 month old baby! I’m working on a little baby fever these days and I got my “fix” by holding this sweet little one! She is seriously precious!

Now I’m randomly going to switch to another topic and you’re just going to be cool and go along with it, right?… K, awesome.

Last night Lyla {my daughter} was snoozing away by 7 pm {which never, EVER happens} and hubs was out doing guy stuff sOoOo I had the house all to myself. Yup, allll to my lonesome. At times like these, I love cozying up on the couch with a soft blanket, stalking Pinterest and sippin’ on some hot chocolate. I normally just do the instant hot chocolate but I was feeling domesticated. {Oh-la-la} I snagged up a recipe on Pinterest for some yummy hot chocolate, went to work in the kitchen and wam-bam, within minutes I had the best hot chocolate I’ve ever tasted! This is worth checking out folks…

{FYI: This recipe is for one serving.}

Ingredients:

  • 1 Cup Milk
  • 2 1/2 Tbsp Nutella
  • 1 Tbsp Cocoa
  • 1 Tbsp Peanut Butter
  • Tiny Pinch of Salt
  • Top it off with Marshmallows &/OR Whipped Cream
How To:
  1. In a small sauce pan over medium heat, whisk all ingredients together until well blended and hot.
  2. Pour in a cup and top with whipped cream and/or marshmallows.

Easy stuff! I’m telling you, this bad mamma jamma tastes like a little piece of heaven.
Oh and I know it’s probably pretty tempting to judge the indecent amount of marshmallows I piled on. ;-)

Elderberry Syrup {Home-Made Cold & Cough Syrup}

I hope everyone had a wonderful holiday with friends and family! I had family from my side AND my husbands side in town for all the fun Christmas festivities! It was madness… Fifteen of us got snowed in at my mother-in-laws cabin sooo we played games, went sledding and ate like nobody’s business until we crashed. Although it was a lot of fun, I’m thankful to be getting back into the routine of every day life. Unfortunately, every day life currently consists of my little one having a nasty cold due to this December weather. Out of a moment of desperation, I asked {more like begged ;-) } all of my Facebook friends for a remedy to rid Lyla’s {my daughters} cough. My cousin Cindy giving me a fantastic recipe for Elderberry Syrup which is safe for adults and children! I have heard of Elderberry Syrup before but didn’t know much about it so I decided to research it out. Here’s the info aaand the recipe!

You can purchase pre-made Elderberry Syrup at the store for approx. $10 for a small tube. I decided to make it instead and winded up only spending approx $14 to buy ALL ingredients and filled 1 3/4 mason jars with this recipe which will last forever practically!

{Listed at the bottom of this post you will find benefits for each ingredient listed.}

Ingredients:

  • 3.5 cups of water
  • 2 Tablespoons fresh or dried ginger root
  • 1 tsp cinnamon powder
  • 1/2 tsp cloves or clove powder
  • 1 cup raw honey

Recipe:

  • Pour water into saucepan and add elderberries, ginger, cinnamon, and cloves. {Do NOT add the honey yet.}

  • Bring to a boil.
  • Once to a boil, reduce to a simmer for about 45 mins and remove from heat.
  • Pour liquid through a strainer and discard/compost the elderberries.

  • Once the liquid is cooled, add in the raw honey and stir.
  • Transfer to a 16 oz canning jar and place in refrigerator until needed.

This smells delicious and I have to say I love the way it tastes as well! Added benefit! :-)

Q’s & A’s:

How often can I take Elderberry Syrup? -Adults and children {above the age of 1} can take this daily to boost the immune system. Standard dose is 1 tsp for kids and 1 Tbsp for adults. If the flu does strike, take the normal dose every 2-3 hours instead of once a day until symptoms disappear. **If pregnant, consult doctor first!**

Why elderberries? -Elderberries contain potassium and large amounts of vitamin C, and have been proven in quite a few  studies to shorten the duration of cold and flu symptoms, as well as strengthen the immune system. Elderberries are also a good source of anthocyanins {powerful antioxidants}.

Why ginger? -It’s prevention of nausea and vomiting is the most well-documented use for ginger root. It is particularly helpful in cases of chemotherapy, motion sickness and morning sickness. Ginger root may also fight inflammation and is useful in treating conditions such as arthritis or ulcerative colitis.

Why cinnamon? -Cinnamon inhibits bacterial growth and can help fight illness.

Why cloves? -The active principles in the clove are known to have antioxidant, anti-septic, local anesthetic, anti-inflammatory, rubefacient (warming and soothing), carminative and anti-flatulent properties.

Why raw honey? -Honey contains far more anti-oxidants than some fruits and vegetables and every vitamin and mineral including water we need to sustain life. Honey has all the enzymes which help to ensure our foods are digested properly keeping our immune systems working properly plus it is really helpful for irritable bowel syndrome, arthritis and even when trying to lose weight. Your skin will benefit from raw honey too, this is perhaps one of the most understated acne cures and is wonderful for healing and tightening the skin because it heals, protects and moisturizes.

Doughnut Drops {{Hubs Recipe!}}

Is everyone getting ready for Thanksgiving?!? We have four {yup, four!} Thanksgiving “get-togethers” to go to between Thursday and Friday! Although I’m anxious to see family, I’m a little nervous about all the traveling with a toddler. A sick toddler at that. My poor girl is currently teething terribly and was up ALL last night. I’m crossing my fingers she is feeling MUCH better before we head on our way to the dinners. {Wish us luck ;-) }

The Fall and Winter seasons are giving me the cravings something bad. With all the coziness of the holidays it makes me want to eat sweets every stinkin’ day of my life. Hubs knows I’m ALWAYS a sucker for a tasty treat so he decided to whip something up for me…uh-hum, I mean us. ;-) Here’s his recipe! Dun…dun…dun…

DOUGHNUT DROPS

INGREDIENTS:

  • vegetable oil
  • 1 1/3 cup pancake mix
  • 1 egg
  • 1/3 cup milk
  • 2 tablespoon sugar
  • powdered sugar
  • cinnamon

DIRECTIONS:

  1. Combine pancake mix, sugar, milk and egg.
  2. Stir until pancake mix is moistened.
  3. In a saucepan, heat approximately 1 in of vege oil until boiling.
  4. Drop approx. 1 tablespoon of batter into the boiling oil.
  5. Brown both sides, then drain on paper towels.
  6. Sprinkle with powdered sugar and cinnamon.
  7. Repeat.

I will warn you… You’re taste buds will be rejoicingggg. These are incredibly addicting and uber tasty!

Crock Pot Monday {{Onion Roast}}

It’s another Crock Pot Monday!

I have made this recipe twice now and found it too good NOT to share! This roast is cooked with thick onions to keep it juicy and flavorful and quite honestly… it couldn’t taste better. My father-in-law “appreciates” his food a lot more than some and he was a huge fan of this recipe and even went for seconds! {boom… Successssss ;-) } Thanks to Kalyn’s Kitchen our family will be enjoying this recipe for years to come!

{{Makes 6 servings}}

INGREDIENTS:

  • 3-4 pound boneless chuck roast
  • 1-2 T steak rub
  • black pepper to taste
  • 1-2 T olive oil (depends on your pan)
  • 1/4 cup water to deglaze pan
  • 2-3 large onions, peeled and thickly sliced
  • 1 cup beef broth
  • 1/2 cup balsamic vinegar
  • 1/2 cup tomato sauce

DIRECTIONS:

  1. Trim as much fat as you can from roast, and cut if necessary to fit into crock pot.
  2. Rub meat well with steak seasoning and black pepper.
  3. Heat heavy pan with small amount of olive oil and brown roast well on both sides. {This will take a few minutes; don’t rush the browning step.}
  4. While the roast browns, combine beef broth, balsamic vinegar and tomato sauce in a mixing bowl.
  5. Peel onions and cut into thick slices and place in the bottom of crock pot.
  6. Put meat on top of onions and pour beef stock mixture over.
  7. Set crock pot to low and cook 6-8 hours, until beef is tender.

{Serve with cooked carrots and potatoes.}

Crock Pot Monday {{White Chicken Chili Recipe}}

Hey crock pot lovers! I’ve been enjoying hearing all the wonderful responses about Crock Pot Monday from everyone! Many of you have relayed to me that you are pumped for all the new crock pot ideas from week to week. I’m just as stoked as you all! It makes my Mondays a breeze. {Well, not a breeze… not too much is a breeze when you’re a momma but it makes it a heck of a lot easier! :) } This week I decided just to share a basic chili recipe. It was snowing earlier today here {crazy!} and it made me in the mood for some delicious Chili! This White Chicken Chili Recipe was actually given to me by one of the followers of DIYconfessions, Jennifer Ries. She stated “Two of my three kids are very picky and they love this recipe!”. Check out her recipe!

WHITE CHICKEN CHILI

  • 2 cups Cooked shredded chicken
  • 16 oz jar Salsa (your family’s favorite)
  • 48oz jar of Randell’s Northern Beans {I did not have Northern Beans on hand so we used chili beans.}
  • 1 – 8oz package of Colby jack cheese

{{I added in…}}

  • 8 oz can of corn
  • 1 onion {finely chopped}

DIRECTIONS:

  • Season & cook your chicken in the skillet until cooked through.
  • Put all ingredients in the crock pot on High for 3 hours, stir, then low for 1 hour & serve!

She also added in that it tastes delicious with Tortilla Chips! :)
